Mutabal Recipe

Mutabbal is a cold appetiser. It’s basically mashed cooked eggplant mixed with tahini, olive oil, possibly lemon juice, and various seasonings.

Ingredients of Mutabbal

  • 2 kg Eggplant (Roast the eggplant very well and remove the skin of eggplant if there is seeds remove them also. And chopped them very well.)
  • 50 gm Yogurt 
  • 75 gm Tahini 
  • 2 gm Garlic (Minced )
  • 12 gm Olive Oil 
  • 20 gm Lemon Juice (Fresh )
  • 25 gm Ice Cube 

How to make Mutabbal

  1. In a mixing bowl add yogurt, tahini, olive oil, minced garlic, lemon juice , ice cubes and salt. Now whisk the mixture.
  2. Add the chopped eggplant into the mixture and mix them very well. Your mutabal is ready to serve.
